Lime and Parsley Crispy Chicken Thighs Recipe


120g breadcrumbs
65g plain flour
30g fresh parsley (chopped)
4 chicken thighs
4 garlic cloves (minced)
2 limes (juiced)
160ml buttermilk
2 tsp brown sugar
¾ tsp ground cumin
½ tsp chilli flakes
Cooking spray
Salt and pepper, to taste


Step 1: Mix the buttermilk, chilli flakes, garlic, sugar, cumin, parsley and lime juice in a large bowl and combine well.
Step 2: Dip the chicken thighs into the buttermilk mixture and then roll in the breadcrumbs until fully coated.
Step 3: Spray the chicken thighs on all sides with cooking spray.
Step 4: Plug in and switch on the air fryer at the mains power supply.
Step 5: Set the temperature on your air fryer to 200ºC and the time to 22–28 mins and carefully place the chicken thighs into the relevant cooking compartment.
Step 6: Check that the chicken is cooked thoroughly before serving.
Step 7: Serve immediately with your choice of sides.
