Loaded Greek Asparagus Omelette Recipe


2 eggs
3-4 cherry tomatoes, halved
3 asparagus spears, chopped and blanched
25g feta, crumbled
Salt and pepper, to taste


Step 1: Preheat the omelette maker.
Step 2: In a bowl, beat the two eggs and season with salt and pepper.
Step 3: Stir in the feta cheese, tomatoes and cooked asparagus.
Step 4: Once the indicator light has switched off, pour the omelette mixture evenly between the two non-stick cooking plates.
Step 5: Close the lid and cook for approximately 6-8 minutes until fluffy.


Top tip! Serve with finely sliced red onion and shoots of peppery rocket for added bursts of flavour.
