For lunch or as a starter, this flavourful soup is the perfect comforting food.

INGREDIENTS

300g mushrooms

1 celery stick, chopped

1 onion, peeled and finely chopped

1 clove garlic, crushed

1/2 leek, finely chopped

600ml vegetable stock

2 tbsp plain flour

1 tbsp olive oil

100ml double cream too serve

salt and pepper to taste

METHOD

Step 1

Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients into the soup maker.

Step 2

Stir all the ingredients together to ensure they are combined, then select the smooth soup setting.

Step 3

Allow the cycle to run.

Step 4

Once the soup has finished, blend further to reach the desired consistency and serve with a dash of cream and crispy croutons.
