Mushroom Soup Recipe
Perfect in our EK5118 Digital Soup Maker
Ingredients
300g mushrooms
1 celery stick, chopped
1 onion, peeled and finely chopped
1 garlic clove, crushed
½ leek, finely chopped
600ml vegetable stock
2 tbsp plain flour
1 tbsp olive oil
100ml double cream, to serve
Salt and pepper, to taste
Method
Step 1: Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients into the soup maker.
Step 2: Stir all the ingredients together to ensure they are combined, then select the 'Smooth' soup function.
Step 3: Allow the cycle to complete.
Step 4: Once the soup has finished, blend further to reach the desired consistency and serve with a dash of cream and crispy croutons.
