Mushroom Stuffed Chicken Breasts Recipe

1 boneless skinless chicken breast, cut in half
3 mushrooms, finely chopped
1 clove garlic, crushed
1 egg, lightly beaten
2 tbsp grated parmesan
Handful of fresh parsley, chopped
Handful of breadcrumbs


Step 1: Mix the mushrooms, garlic, parmesan and parsley together in a bowl.
Step 2: Slice a pocket into the side of each chicken breast.
Step 3: Stuff with the prepared mushroom and parmesan mix and then fold closed.
Step 4: Dip each chicken breast into a lightly beaten egg and then into the breadcrumbs.
Step 5: Carefully place each piece into each cooking plate and cook for 20 minutes.
Step 6: Allow the chicken breast to cool for a few minutes before serving.
