INGREDIENTS
1 chicken breast cut in half
3 mushrooms, finely chopped
1 clove garlic, crushed
1 egg, lightly beaten
2 tbsp grated parmesan
handful of fresh parsley, chopped
handful of breadcrumbs
METHOD
Step 1
Mix the mushrooms, garlic, parmesan and parsley together in a bowl.
Step 2
Slice a pocket into the side of each chicken breast.
Step 3
Stuff with the prepared mushroom and parmesan mix and then fold closed.
Step 4
Dip each chicken breast into a lightly beaten egg and then into the breadcrumbs.
Step 5
Carefully place each piece into each cooking plate and cook for 20 minutes.
Step 6
Allow the chicken breast to cool for a few minutes before serving.
