  • 2 eggs
  • 50 g cheddar cheese, grated
  • 3-4 mushrooms, chopped
  • 1 spring onion, chopped
  • 1/2 red chilli, finely chopped
  • 1 garlic clove, crushed
  • handful rocket, chopped
  • salt and pepper, to taste
  • spray oil

Method

  1. Preheat the omelette maker.
  2. Once the indicator light has switched off, lightly spray the non-stick cooking plates with oil.
  3. Add the chopped mushrooms and spring onion and cook for approximately 3-4 minutes, adding the garlic and chilli once the mushrooms and onions have softened.
  4. remove the vegetables and set aside, closing the omelette maker to retain the heat.
  5. In a bowl, beat the eggs and season with salt and pepper.
  6. Add in the cheese, rocket, cooked mushrooms and spring onions and continue to to mix until all ingredients are combined.
  7. Once the indicator light has switched off, divide the omelette mixture between the non-stick cooking plates.
  8. Close the lid and cook until fluffy.
