Chilli Cheese, and Garlic Mushroom Omelette

Ingredients
- 2 eggs
- 50 g cheddar cheese, grated
- 3-4 mushrooms, chopped
- 1 spring onion, chopped
- 1/2 red chilli, finely chopped
- 1 garlic clove, crushed
- handful rocket, chopped
- salt and pepper, to taste
- spray oil
Method
- Preheat the omelette maker.
- Once the indicator light has switched off, lightly spray the non-stick cooking plates with oil.
- Add the chopped mushrooms and spring onion and cook for approximately 3-4 minutes, adding the garlic and chilli once the mushrooms and onions have softened.
- remove the vegetables and set aside, closing the omelette maker to retain the heat.
- In a bowl, beat the eggs and season with salt and pepper.
- Add in the cheese, rocket, cooked mushrooms and spring onions and continue to to mix until all ingredients are combined.
- Once the indicator light has switched off, divide the omelette mixture between the non-stick cooking plates.
- Close the lid and cook until fluffy.
