Make a delicious and filling breakfast, brunch, or lunch option with this mushroom and cheese omelette.

INGREDIENTS

2 eggs

50g cheddar cheese, grated

3-4 mushrooms, chopped

1 spring onion, chopped

1/2 red chilli, finely chopped

1 garlic clove, crushed

handful rocket, chopped

salt and pepper, to taste

spray oil

METHOD

Step 1

Preheat the omelette maker.

Step 2

Once the indicator light has switched off, lightly spray the non-stick cooking plates with oil.

Step 3

Add the chopped mushrooms and spring onion and cook for approximately 3-4 minutes, adding the garlic and chilli once the mushrooms and onions have softened.

Step 4

remove the vegetables and set aside, closing the omelette maker to retain the heat.

Step 5

In a bowl, beat the eggs and season with salt and pepper.

Step 6

Add in the cheese, rocket, cooked mushrooms and spring onions and continue to to mix until all ingredients are combined.

Step 7

Once the indicator light has switched off, divide the omelette mixture between the non-stick cooking plates.

Step 8

Close the lid and cook until fluffy.
