A comforting twist on a breakfast favourite. Crisp, golden sourdough topped with creamy peanut butter and caramelised banana, all finished with a drizzle of maple syrup and a scattering of cacao nibs or chocolate chunks.

INGREDIENTS

1-2 bananas

1 slice sourdough

1 egg

1/4 cup milk

Peanut butter

Maple syrup

Cacao nibs or chocolate chunks

METHOD

Step 1

Finely slice your banana, then flatten out slightly with your hand, transferring onto a piece of parchment.

Step 2

For the French Toast, crack your egg into a flat bowl, whisking with your milk, then soak your slice of sourdough on either side. Add this to an air fryer basket lined with parchment.

Step 3

To the other basket, add your banana on parchment, then set the French Toast to 170°C for 12 minutes, and your banana to 190°C for 15 minutes.

Step 4

Once your banana is caramelised and your French Toast is cooked, plate up by spreading peanut butter over the toast. Then, top with your banana, maple syrup and cacao nibs or chocolate pieces and enjoy!
