Piri Piri Chicken Pie Recipe

Perfect in our EK4082 Deep Fill Pie Maker



4 chicken breasts, sliced
2 sheets shortcrust pastry
2 sheets puff pastry
1 tin chopped tomatoes
100ml single cream
½ white onion, chopped finely
½ red onion, chopped finely
1 red pepper, chopped
1 orange pepper, chopped
4 garlic cloves, crushed
1 red chilli, chopped
1 tbsp tomato puree
50ml hot sauce
2 tsp paprika
1 tsp cayenne pepper



Step 1: Heat up a drizzle of oil in a frying pan and, once hot, add the white and red onion, the red and orange pepper, garlic, and chilli and cook until the onions are golden, and the peppers have softened
Step 2: Add the paprika and cayenne pepper to the pan and stir, then add the sliced chicken breast and cook until the chicken is browned
Step 3: Add the tomato puree, chopped tomatoes and hot sauce and leave to simmer for 10 minutes
Step 4: Stir in the single cream and take off the heat
Step 5: Cut the base for the pie out of the shortcrust pastry and cut the lid out of the puff pastry
Step 6: Pop the base in the pie maker and fill with 2-3 tbsp of chicken mix, then top with the puff pastry lid, cook for 10 minutes, then serve
