This vibrant dish combines fresh seabags with the vibrant, roasted goodness of Mediterranean vegetables. The fillets are lightly seasoned with rock salt and lemon juice, enhancing their flavour, making them perfect for a light summer dinner or a healthy, flavourful lunch.

INGREDIENTS

2 seabags fillets

5 cherry tomatoes

1 red onion

1 courgette

1 red pepper

1 yellow pepper

2 tsp dried oregano

Handful of fresh rosemary

A drizzle of lemon juice

A drizzle of olive oil

Rock salt

METHOD

Step 1

Roughly chop the vegetables into similar sized pieces. The smaller the pieces, the quicker they will cook.

Step 2

Add the chopped vegetables into the air fryer and spray with oil. Season with fresh rosemary and dried oregano.

Step 3

Cook the vegetables at 180°C for approximately 20 minutes.

Step 4

Spray the fish fillets with oil, then rub with rock salt and a lemon wedge. Add to the air fryer and cook along with the vegetables for a further 10-15 minutes until the sea bass is cooked thoroughly and the vegetables are starting to brown slightly.

Step 5

Serve the sea bass fillet on top of the roasted vegetables and enjoy.
