INGREDIENTS
2 chicken breasts
4 rashers of bacon
140g sun-dried tomatoes
75g mozzarella
salt and pepper, to taste
METHOD
Step 1
Set the air fryer temperature to 230°C and preheat for 5 minutes.
Step 2
Meanwhile, butterfly the chicken breasts by cutting a deep slit lengthways- do not cut all the way through.
Step 3
Alternate placing slices of mozzarella and sun-dried tomatoes into the chicken breast until suitably stuffed.
Step 4
Close the chicken breasts and season with salt and pepper.
Step 5
Wrap each chicken breast with 2 rashers of bacon and use cocktail sticks to hold them into place.
Step 6
Using heat resistant oven gloves, place the chicken breasts into the air fryer basket and shut the drawer.
Step 7
Cook the chicken for 20-30 minutes and ensure it is fully cooked before serving.
