Super Green Omelette Recipe


2 eggs
20g baby leaf spinach, chopped
1 spring onion, chopped
½ ripe avocado, sliced
½ lime, zest and juice
¼ green chili, deseeded and chopped (or chili sauce)
1 tbsp chopped coriander
Salt and pepper, to taste


Step 1: Preheat the omelette maker.
Step 2: In a bowl, beat the two eggs with lime zest and juice.
Step 3: Season with salt and pepper.
Step 4: Stir in all the ingredients and combine thoroughly.
Step 5: Once the indicator light has switched off, pour the omelette mixture evenly between the two non-stick cooking plates.
Step 6: Close the lid and cook for approximately 6-8 minutes until fluffy.
