Vegetarian Lasagne:
Easily made in our Megastone Palladium Roaster
Ingredients:
2 tbsp olive oil
2 onions
3 cloves of garlic
2 courgettes
250g button mushrooms
Tin of chopped tomatoes
200g spinach
400g fresh lasagne sheets
80g vegetarian parmesan
2 mozzarella balls, sliced
Cherry tomatoes, to top
Method:
Step one: in a frying pan, heat the oil and garlic
Step two: add the courgettes and mushrooms and heat until lightly browned
Step three: add the tinned tomatoes and 400ml boiling water
Step four: simmer for 10 minutes
Step five: transfer to a roasting tray, stir in the spinach and pasta in batches
Step six: add the parmesan and mozzarella
Step seven: roast until brown and bubbling
Step eight: leave to cool, top with cherry tomatoes and enjoy!
