Vegetarian Sausage Rolls:

Easily made in our Salter Mini Chopper and Megastone Pan Set veggie-sausage-rolls.png


200g mushrooms of choice, we used chestnut

3 tbsp olive oil

2 leeks

2 garlic cloves

2 tsp Dijon mustard

1 tbsp sage

60g mature cheddar

70g white breadcrumbs

320g ready rolled puff pastry

1 beaten egg, to glaze


Step one: pulse mushrooms in a food blender until finely chopped

Step two: add olive oil to frying pan and add leeks, with a pinch of salt

Step three: fry until softened and then transfer into a bowl

Step four: fry mushrooms for 10 minutes and then add the garlic, sage and mustard

Step five: leave to cool

Step six: heat the oven to 200C

Step seven: combine the mushroom mixture with the leeks and then add cheese and breadcrumbs

Step eight: work everything together until the mix is slightly stodgy

Step nine: roll out puff pastry and cut out rectangles for the rolls

Step ten: add your mushroom mix into the middle and then seal around the mix and press the edges with a fork to create parcels

Step eleven: brush each one with egg and bake for 25-30 minutes, until golden brown

Step twelve: allow to cool and enjoy!
