Stuffed Chicken Breasts Recipe
Easy to make in our EK2716 Omelette Maker!
Ingredients
1 boneless skinless chicken breast, cut in half
2 vine tomatoes, sliced
1 egg lightly beaten
4 tbsp grated mozzarella
1 tbsp olive oil
Handful of fresh basil, torn
Handful of breadcrumbs
Method
Step 1: Mix the sliced tomatoes, mozzarella and basil in a bowl and drizzle with olive oil.
Step 2: Slice a pocket into the side of each chicken breast.
Step 3: Stuff with the prepared mix and then fold closed.
Step 4: Dip each chicken breast into a lightly beaten egg and then into breadcrumbs.
Step 5: Carefully place each piece into each cooking plate and cook for 20 minutes.
Step 6: Allow the chicken breasts to cool for a few minutes before seasoning to taste and serving.
